Italian Vegetable Pizza
Ingredients:

Pizza dough:
- 30 g fresh yeast
- ¼ litre lukewarm water
- 500 g flour
- 1 tbsp. olive oil
- 1 tsp. salt
- 2 large, red capsicum
- 500 g mushrooms
- 2-3 large tomatoes
- 2 tbsp. tomato puree
- 250 g mozzarella
- 200 g grated cheese
- 1 bunch of fresh oregano
- 1 tin of sweet corn, if desired
- 150 spring onions, if desired
Preparation: 60 mins + 90 mins resting time
If it needs to be quicker, use frozen ready-to-use pizza dough. Tip: The little ones can help kneading the dough. Once their hands have been washed, they can dive into some doughy fun. If it gets too difficult, you can also step in again and mould the dough into its final shape.
Instructions:
- To make the pizza dough, add the flour and salt to a bowl and mix well. In another smaller bowl, dissolve the yeast into lukewarm water with the help of a fork or spoon. Add the solution, along with the oil, to the flour and knead with your hands until the mixture becomes a light, non-sticky, dough. Afterwards, cover the dough well and leave in a warm place for about 1-1 ½ hours. At this point its volume should have doubled.
- While the dough is resting in a warm place you can cut the vegetables into small pieces. Make sure to first thoroughly wash the vegetables. Then place out cutting boards for all those helping. Here too, it's shapes, colours and patterns that make helping in the kitchen a real joy. But please be careful to use child-friendly utensils. Cut the red capsicum into large rings, the mushrooms into small slices and, if you want, the spring onions also into rings. Slice the mozzarella and open the tin of sweet corn.
- Once the dough's volume has clearly increased, you can roll it out. Then carefully place the dough on a baking tray covered with a sheet of baking paper or into two round baking tins (also covered with baking paper).
- Then have some fun topping the dough: First spread tomato puree onto the dough, making sure to leave the edge free so that it later becomes nice and crispy.
- Then, together with your children, you can top the pizza base any which way you wish or just simply wildly toss everything onto it! The more colourful, the better. Then, finally, top the pizza with the different kinds of cheese and place in the oven at 200°C for 30-40 minutes.
- When that's done, the very last touch is to pick the still fresh oregano and place it on the deliciously steaming pizza.
