Sweet potato puree with spinach and peas

Combining vegetables with sweet ingredients is a good way, to introduce new flavours to your baby. Try this recipe with broccoli instead of spinach and get a new taste!
- 375g sweet potato, peeled and chopped
- 50g leek, washed and finely sliced
- 50g frozen peas
- 75g fresh baby spinach, washed and any tough stalks removed
- 25g unsalted butter
- apple juice
- peppermint tea

Instructions:
- Melt the butter in a saucepan and sauté the leak until softened. Add the sweet potato and pour over 200ml water. Bring to the boil, cover with a lid and simmer until soft and tender.
- Meanwhile cook frozen peas and spinach together with the peppermint tea in a pot. Blend to a smooth puree.
- Drain the sweet potato/leek mixture and blend to a smooth puree
- Mix both purees and add some applejuice
