Sweet Pumpkin Puree

Tip:
Butternut pumpkins have their name from their soft butter-like texture and from the fine, nutty taste of the orange pulp. The pumpkin is rather easy to cook with since there are only a few pumpkin seeds inside.
- 1 Butternut Pumpkin
- 20 g oat flakes
- 1 tsp. oil (e.g. sunflower oil)
- 1 ripe peach
Preparation: 20 mins
Tip:
Butternut pumpkins have their name from their soft butter-like texture and from the fine, nutty taste of the orange pulp. The pumpkin is rather easy to cook with since there are only a few pumpkin seeds inside.
Instructions:
- Peel the pumpkin and cut into large pieces. Place them in a saucepan with a little water and stew for about 10 minutes. The pumpkin flesh is ready when it's soft and tender to touch.
- Add the oat flakes and oil and finely puree everything with a hand-held blender.
- Lightly blanch the peach in boiling water and then carefully remove its skin. Careful: The peach will be very hot, so mind your fingers!
- Then also slice the peach into pieces and add to the pumpkin puree. Puree everything once again until it becomes a creamy mixture.
